In the gin distillation process, there is a tiny fraction of spirit that escapes into the ether, sacrificed by distilleries around the globe. In its Watenshi gin, Cambridge Distillery works to capture this lost fragment – playfully named the angel’s share – preserving the elusive spirit from its famous Japanese gin. The process is no easy feat; requiring an atmospheric pressure less than half that found at the summit of Mount Everest and temperatures that mimic the coldest days ever recorded at the South Pole, it results in a gin like no other.
