Fine de Bourgogne is obtained by distilling the lees (the leftover particles in the wine after fermentation) collected at the bottom of the barrels. These are then sent to a distiller who produces a brandy – aged in a cask in Limousin oak for approximately 10 years. The result of this process is a characterful brandy with a smooth and well-rounded finish due to the advantage of barrel ageing.
