A hint of red wine gives this Champagne a new dimension.
While the secrets behind the vinification of Le Rosé Champagne date back to the origins of Billecart-Salmon, passing down through seven generations for consistency year after year, there are a couple of things that can be said for certain. Its bright, fresh flavour comes from fermenting in stainless steel rather than oak, and a tenth of the Pinot Noir in the blend is vinified as red wine, giving the otherwise fruity palate a distinct smokiness.
