Dönnhoff is ranked as one of Germany’s finest wine producers, with its estate producing 80% Riesling grown on rocky, volcanic soil, which gives the wines balanced acidity and intense minerality. The winemaking process is kept simple – with whole-bunch pressing followed by 10-18 hours of settling and fermentation in casks or stainless steel tanks – which lets the notes of each blend really shine through, as shown in the 2014 Niederhauser Hermannshohle Riesling Auslese Goldkapsel, which boasts a refreshing flavour of all-spice and star anise, and an intense nose of apricot and spice.
