Duncan Taylor's Octave range has become a standout product for the independent bottler, and for good reason. Utilising ex-sherry octaves (60-litre casks) to finish each batch for a three-month final maturation period, each batch is limited to less than 90 bottles. Due to the small cask size, the interaction between air, wood and whiskey is sped up, leading to a smoothening and broadening of the flavour, while still preserving the distillery's individual profile.
