Canadian winery Inniskillin is renowned for its ice wines – those produced from grapes that are frozen while still on the vine. To achieve this, the winemaker harvests the Reisling grapes at night when 80% of their water content is frozen by the cold Canadian climate. Pressing the grapes while frozen results in highly concentrated juice and a naturally sweet wine – expect apricot jam, pumpkin pie and lemon drops on the palate of the 2021 vintage.
