Thanks to a combination of imagination and confidence, Copenhagen-based distiller Empirical has managed to create new spirits based on taste, not type. The Ayuuk is an earthy spirit with hints of smoke and a touch of dark red fruit, an essence meant to evoke the building euphoria of a hike through the Sierra Norte mountains in Spain. It’s tempered by pilsner malt and purple wheat, bringing the solid goodness of the earth’s bounty straight into your cup – we recommend serving with a grapefruit soda and a squeeze of lime.
