First founded in 1961 through the marriage of Jacques Rossignol and Mado Trapet and now run by their sons, Pinot Noir-producer Rossignol-Trapet takes a bio-dynamic approach to its winemaking, using organic fertilisers and natural herbicides in its vineyards. Its Gevrey-Chambertin Vieilles Vigne is made from a blend of vines averaging over 60 years old with 66% whole bunch fruit, which gives the wine a perfumed finish and an earthy taste, with notes of dark cherry and raspberry.
